Easy and Delicious, Healthy Overnight Oats

Overnight oats have got to be my new favorite breakfast. Your tummy won't grumble after you're finished, and the chia seeds will fill you up with your omega-3 fatty acids.

Ingredients:
  • 1/2 cup rolled oats
  • 1/2 cup coconut milk (or milk of your choice)
  • 1 tablespoon chia seeds
  • 1/2 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • sliced strawberries for topping
Begin by mixing all of the ingredients together in a glass mason jar (minus the fruit). Refrigerate overnight. In the morning, slice up your favorite fruit and grab a spoon. You're ready to go!

This recipe variation is not naturally super sweet, but I enjoy it that way. The fruit has enough sweetness to go around. You know a breakfast is healthy when it doesn't taste doused in syrup and carbs like a plate of pancakes!

I choose a simple mixture for my jar, but other people prefer adding different types of fruit, nuts, yogurt and milk. Honey would be a good substitute for maple syrup. Whatever you do, remember the 1:1 ratio of milk to oats.
