Healthy + Simple, Gluten-Free Veggie Wraps

I just discovered my favorite, quick lunch of ALL TIME. As a gluten-free foodie, I consistently find myself searching for gluten-free snacks and healthy lunches that don't take forever to prepare. This is a simple alternative to fancy flatbread dishes (none of which are typically GF). A co-worker of mine previously prepared this dish for me, inspired by the Turkish roots of her boyfriend. Hers included meat, as well as traditional flatbread, but I tweaked mine and added black beans.

Ingredients:

  • 1 can strained black beans
  • Bell peppers
  • Carrots
  • Mushrooms
  • Cucumbers
  • Plain greek yogurt
  • Hummus
  • Feta cheese (crumbled)
  • Kalamata olives
  • Tortillas - either Ivory Teff wraps from La Tortilla or Mission's gluten-free
You can alter the amount of each ingredients to your liking and the serving size you intend on making. Jared and I like to chop up a whole bunch of veggies for the following couple days.

All you gotta do is layer the goodies in the wrap, fold it together and munch on! It's low-carb, healthy and fulfills a good portion of your needed veggie servings, in addition to good fats.
