*Makes 6 slices of French toast
Ingredients: gluten-free bread of your choice 2 eggs milk of your choice (I use regular 2%) cinnamon vanilla extract butter
Toppings: peanut butter jelly of choice maple syrup (I use the agave maple syrup blend from Trader Joe's)
Start by whisking 2 eggs with a generous dash of milk in a bowl (eyeball it--you don't want too much milk, but you also don't want too little). Sprinkle in a little bit of vanilla extract and cinnamon for extra flavor. This creates the base of your French toast.
Dip each slice of bread into the bowl mixture and coat well. Then, drop into a hot skillet on the stove with a little bit of butter (I like Earth Balance or Kerrygold).
Now, serve the slices on a plate and stack 'em high! Coat with a thin layer of jelly and maple syrup. You can either add the peanut butter on top of the slices, or on the side of your plate and dip (my method).
Bon Appétit! This recipe is so simple, yet I keep saying to myself: "Why did I not think of this before!?" In all the years I've had French toast, this idea never came to me!
