A couple years ago, I went to a local wellness establishment to seek out nutritional and naturopathic advice for my overall health and diet, and I'll admit: I fell off the wagon. Recently, I've invested deeper in my health + honoring self with healthy food recipes & habits.
This is my mini series covering my healthier cooking choices for my own purpose of documentation and to hopefully provide YOU with some yummy new recipes! I've never been much of a cook, so this is a new experience for me cooking every night! ;) Each week, I'm sharing the best dinner recipes I've found along the way, as well as any snacks to munch on.
DINNER RECIPE #1:
I swear to you: this rice mixture is my new favorite thing! I eat it as a side straight up, even minus the peppers! However, the peppers are freakin' delicious.
In addition to the spices that are listed here, I included some of Trader Joe's 21 Seasoning Salute! A new fave, easy spice mix of mine.
For dessert, I served organic strawberries covered in natural, semi-sweet chocolate!
BREAKFAST RECIPE #1:
TOMATO AVOCADO MELT
I tried this recipe out and with the right ripe items, it tastes great, however for some reason, I find something odd in the balance of tastes of the tomato, cheese and avocado. However, it's quite likely I just got a bad tomato or avocado when I tried this out!
The melting cheese is DELICIOUS and I highly recommend this as a quick breakfast on the go. The recipe is from the custom Tasty cookbook - just toast an English muffin, add avocado, a slice of tomato, melt mozzarella and sprinkle some paprika!
DINNER RECIPE #2:
+ BLACK BEAN HASH
This recipe is literally INCREDIBLE. I paired it with some hashbrowns for a bit of an extra OOMPH!
Add sweet potatoes, onion, pepper, salt, paprika and cumin in some olive oil in a medium heat skillet. After 10 minutes, add spinach and cook for 5 more. Then, add the black beans and stir until well-blended and heated through. Serve with eggs and avocado, or on its own! I chose scrambled eggs - they're my all-time fave and I honestly don't trust myself to cook overeasy.
DINNER RECIPE #3:
STUFFED SWEET POTATOES
Cassey Ho from Blogilates released a video of some fantastic meal prep recipes recently. Oh my word did I fall in love with this meal! Of course not an everyday meal because of the high starch content, but a great treat every once in awhile.
The balance of the sweet from the potatoes and the savory of the tofu/meat is awesome. We added sour cream and cheese, because why not? And, since I don't eat poultry or red meats, I substituted the chicken/beef for some Trader Joe's sirarcha tofu - THE BEST!
DINNER RECIPE #4:
SALMON + RICE + ASPARAGUS
My favorite dinner lately has been one of the Trader Joe's premium salmon burgers (with no additives or other crap) pan-fried with a side of veggies and a serving of grain (the organic brown rice in the frozen section of TJ's is kind of a life saver). Sometimes I'll throw an avocado on the side for some fat.
Of course, I drizzle my favorite TJ's sriracha sauce on this dish to add some flavor, but you could add pretty much any sauce or condiment. This is a super easy (made in under 10 minutes) and super healthy!
