Easy, Healthy Lunch Salad (+ Nut Butter Treat)
When I'm in the mood for a super healthy but quick lunch, my go-to is a big salad bowl. I start with a bed of mixed baby greens (my favorite is from Trader Joe's, but I'll grab a bag wherever), sometimes a handful of spinach as well.
Then, I choose my favorite topper for the protein piece of the salad: either tunafish, salmon, tofu or beans. Sometimes I will top a bit of beans plus fish to add contrasting yet complimenting flavors.
The next step is to grab all the veggies! I typically choose bell peppers, mushrooms and carrots. Salad dressing is my one unhealthy indulgence in this meal. I'd rather have good tasting salad dressing that masks the "healthy" tastes than get less of the nutrients by eating less due to a gross dressing.
Another item that I love in addition to the large salad is a healthy nut butter (with some chocolate) and a fresh piece of fruit, whether it be an apple, half a nectarine or a handful of strawberries.
This wild friends brand is DELICIOUS. With no added ingredients except dark chocolate, peanut butter and coconut, the Chocolate Coconut Peanut Butter spread is my favorite. I have yet to try their various other types of nut butter spreads, but for now, I'm content. One to two tablespoons is all you need to satisfy your sweet cravings!
