One of my all-time favorite restaurant gems in Olympia, Washington is Mercato Ristorante. This past summer, I took my best friend Emily who was visiting from Canada. Surprisingly, although she grew up most of her life in Olympia, she had never been to Mercato!
We started with cocktails and their complimentary bread with oil and vinegar. We decided to opt for a couple appetizers to split: both the eggplant and the bruschetta. Pictured above is the mouth-watering bruschetta dish consisting of burrata, onion jam and balsamic on ciabatta.
Below is the eggplant dish: fried eggplant with fresh mozzarella, tomato, basil and marinara sauce (a caprese, truly!).
Then, we each ordered a serving of their famous butternut squash ravioli (we're foodies if you couldn't tell already!). This is my favorite dish EVER... the rich, creamy apple cider cream sauce compliments the freshness of the sliced pear, caramelized onions, pecorino and hazelnuts.
