Over the past two months, I've started eating within a healthier lifestyle and dabbling in the world of Whole30 recipes. Of course I still love my burgers and nachos... and sushi, but incorporating healthier eating allowed me to retain my health after reaching pre-diabetic levels in test results. My results shot down in the first 30 days and I am officially free of diabetes scares.

In addition, I returned to gluten-free eating 100%. I have hypothyroidism which is really not a fantastic match for gluten. I feel more tired and rundown when I eat gluten, so why not cut it out completely? I told my nutritionist: I'm a bored eater. I'm not an emotional eater in the sense of stress or depression. I eat when I have nothing better to do, or when I'm trying to procrastinate and push something back. Instead of doing the thing I am procrastinating about, I stuff my belly.

For my Adoption Day (kind of like a second birthday for us adopted folk), I asked my parents for a zucchini spiralizer and am really looking forward to making delicious, low-carb no-cook meals. A client of mine recently launched a ketogenic (high-fat) food blog, Clean Keto which will be featuring the most DELICIOUS peanut sauce zucchini noodle ("zoodle") recipe very soon - I suggest you bookmark!

If you are trying to eat low-carb and low-starch, just remember that eating sweet potatoes (or real potatoes) isn't helpful for you, so not all of these recipes listed below may apply fully to your needs. Sub out whatever floats your boat to reach a happy meal for you!
